aubergine salad
Vegan, side ·Charred aubergine salad is a great and healthy mediteranean side dish!
Ingredients (6 servings)
- 2 Aubergine
- 1 red Paprika
- 1 BS white wine vinegar
- 50 ml Olive oil
- 2 Spring onions
- 1 garlic clove
- 1 handfull parsley
- 2 BS lemon juice
- Pepper
- salt
Steps
- With the grill function of the oven, bake the aubergine and paprika until the skin is black
- Place charred aubergine and paprika in a closed container and let it cool
- Once cool, peel off the skin and roughly dice
- Chop spring onions and mix with paprika and aubergine
- add vinegar, lemon juice, olive oil and chopped parsley
- Salt and pepper to taste
