Charred aubergine salad is a great and healthy mediteranean side dish!

Ingredients (6 servings)

  • 2 Aubergine
  • 1 red Paprika
  • 1 BS white wine vinegar
  • 50 ml Olive oil
  • 2 Spring onions
  • 1 garlic clove
  • 1 handfull parsley
  • 2 BS lemon juice
  • Pepper
  • salt

Steps

  1. With the grill function of the oven, bake the aubergine and paprika until the skin is black
  2. Place charred aubergine and paprika in a closed container and let it cool
  3. Once cool, peel off the skin and roughly dice
  4. Chop spring onions and mix with paprika and aubergine
  5. add vinegar, lemon juice, olive oil and chopped parsley
  6. Salt and pepper to taste
